Koji is a Japanese food product used in the production of Sake, Shochu, and Soy Sauce. What it does to a steak is incredible! Within just a couple of days, a koji-aged steak can take on the nuance of steak that’s been dry-aged for over 30 days! This allows us to offer a great price on a truly delicious, and nuanced steak. What a treat for Dad!
